At our nearest specialty food store, Agata & Valentina, squash blossoms in December cost 4 dollars for 3 blossoms. When we passed the stand with squash blossoms, I had the thought to stuff them with the okra, something we do in the restaurant right now with kobocha squash and shiitake mushrooms. It was December and since we didn’t know anything about squash blossoms, we didn’t know that they are very seasonal and therefore primarily available in the summer. Zucchini are fruits that are derived from flowers, and those flowers are squash blossoms. So it makes sense that squash blossoms are exorbitantly expensive in the winter, because zucchini are in season in the summer. The first time I ever saw or ate a squash blossom was at an incredibly fancy restaurant in Rome.
I made my tempura batter gluten free because whenever I have a chance to make a gluten free recipe using ingredients I commonly have, I do it. This time, instead of using all purpose flour and cornstarch, I used rice flour and cornstarch. Keep in mind that these won’t be a golden brown like some fried foods because the cornstarch and rice flour don’t brown like all purpose flour will. Have you had zucchini or squash blossoms. But this is now my go to recipe for squash blossoms. Now I’ve experimented, I’ve stuffed the flowers with various fillings, I’ve tried different batters or even no batter. Then I saw the squash blossoms. I like to leave the baby zucchini attached sometimes, they’re super delicious fried along with the blossoms. The very next day the farmer for my CSA said, “Oh by the way, if you want any zucchini blossoms you can take some too. I make my batter kind of thick and then sort of squeeze it off of the blossoms. I surveyed their produce, not really planning to buy anything because it was my first year doing a CSA and we had plenty of produce. But the goat cheese stuffing is a necessity for me. It’s a warm, gooey, creamy center with a tangy flavor that balances out the fattiness of frying the blossoms. Carefully fill the bottom of each blossom with a TBS of goat cheese. At the base of each flower, as if nature intended them to be held in a bridal bouquet, a perfectly miniature green zucchini or yellow squash handle.
Instead of chicken broth, you might use vegetable broth of the broth where the beans were cooked in. I’m pretty sure this recipe can work with any kind of bean, but the taste, texture and flavor of ayocotes is so particular that it worked... When the last cup of broth is halfway absorbed mix in the squash blossoms. Squash blossoms might be available at your local farmers’ market. Add one cup of chicken broth and stir constantly until the broth is absorbed. You might add a cup of white wine before stirring in the firs cup of broth for more flavor. Add the third cup of broth to the rice and mix in the peas, beans and mushrooms. Right now I want to share a recipe that I came out with using arborio rice (not exactly a Mexican ingredient, but one of my favorites) and ayocote, or scarlet runner, beans that I picked up last week when we went to the ice cream fair in Tulyehualco. These observations are evidence of the importance of beans in the Aztec empire and other civilizations of pre-Colombian Mexico. If you can find them where you live, I strongly recommend buying a batch. Like maize , beans were an important part in the diet of pre-Colombian civilizations. In one of his observations he mentioned that the native people ate tamales that were mixed with beans. Another important aspect of beans and maize that was noted by Sahagun was the storing and administration of these crops and the capacity the indigenous people had to foresee and prepare for possible times of shortage.
